Salmon

    Baked salmon with warm  salad of new potatoes and asparagus.
    4 people
    800 g salmon fillet
    1 Tbsp. olive oil
    Sea salt and freshly ground pepper.
    Check the salmon for freshness, bones and skin.
    Cut the salmon filet into 8 pieces of 100 g, drizzle with a little olive oil, sea salt and freshly ground pepper.
    Put salmon pieces in an ovenproof dish and place in oven.
    Bake the pieces of salmon 12-14 minutes at 120 degrees.
    By bake salmon at low temperature, you are sure that the salmon is just cooked , which means that it gets very juicy and delicious.
    Server salmon pieces with the warm potato salad.

    Warm salad of new potatoes and asparagus
    500 g new potatoes
    10 green asparagus
    2 shallots
    1 tsp. mustard
    1 tsp. honey
    2 tbsp. cider vinegar or other good white vinegar
    3 tbsp. cold-pressed rapeseed oil
    Sea salt and freshly ground pepper.
    ½ bunch of dill
    A little chervil
    Wash the potatoes thoroughly, put them in a saucepan and cover with water and some salt.
    Bring potatoes to a boil and cook the potatoes for 10-12 minutes, until tender but still with a good bite.
    break root end of asparagus and toss them out.
    Wash asparagus thoroughly in cold water.
    Bring another pot of water to a boil and blanch asparagus for 1-2 minutes here in.
    Come asparagus directly into cold water, so they keep their green color and crispness.
    Drain the potatoes and let them stand a few minutes.
    Stir mustard, vinegar, honey, oil, salt and pepper together for a dressing
    cut the potatoes into small pieces and marinade with dressing.
    Cut the asparagus into small pieces, peel shallots and slice into fine rings.
    Serve it all together with the bake salmon and some good bread.
