Summer cinnamon buns
Makes approx. 20 pieces.
250 ml water
1 egg
30 g yeast
500 g plain flour
60 g sugar
10 g salt
150 g soft butter
Cinnamon butter
150 g of butter
2 tbsp. cinnamon
250 g brown sugar
Put water in a bowl and stir in the yeast, then add eggs, flour, sugar and salt, knead the dough well for a few minutes till it becomes smooth and firm.
Cover the bowl and place dough in the refrigerator for 30 min.
Mix the soft butter into the cold dough, so that it is thoroughly mixed into the dough. Put the dough in the refrigerator and let it rest for 30 min.
Mix cinnamon, butter and sugar into a bowl, till you get a soft smooth cinnamon butter.
Remove dough from refrigerator and place it on a floured surface .Roll out thinly, so its approx. ½ cm. thick. Then put the cinnamon butter in a thin layer on the dough making sure there is 1 cm. around the edges free off butter. Rolll the dough up into a log and close it carefully with the edges free of cinnamon butter.
Cut the log in to approx. 20 buns and put them on a baking sheet with baking paper, give the buns a light press and let them traise for approx. 1 hour, still they rise to approx. double size.
Bake the buns at 200 degrees for approx. 15 minutes. Until golden and crisp.
Take the buns out of the oven and place on a wire rack and let them cool slightly .
