Red peppers

    Red peppers with mint
    4 red peppers
    2 tbsp. olive oil
    2 tbsp. sherry vinegar
    1 tsp honey
    sea salt and freshly ground pepper
    10-15 leaves of mint
    Cut the peppers into half and remove the seeds, rub the peppers with olive oil, mint leaves and salt, put them in an ovenproof dish and cook them in the oven at 200 ° for 15 minutes. Turn around a few times while they cooking.
    Whisk oil, vinegar, honey, salt and pepper together to form a dressing. Remove the peppers from the oven marinate them with dressing and finally a little extra chopped mint
    Let the peppers marinate for 20-30 min. before they are served and eaten as an accompaniment to a main course or as a snack or tapas on the terrace with a cold glass of white wine.
