Roasted christmas pork
    800 g pork loin
    coarse salt
    10-15 bay leaves
    6-7 cups water
    2 tbsp. wheat flour
    sea salt and freshly ground pepper
    a little vinegar, sugar, salt and pepper

    Rub the roast with a little water and plenty of coarse salt, and put in the bay leaves.
    Place the roast on a rack and put in a roasting pan with 6-7 cups water in below.
    put the pork roast in a preheated oven at 180 ° for 65-70 minutes. Halfway through cooking time, pour the liquid from the roasting pan, so you have something to do sauce – awaits you at the very end to make it, there will be too much steam in the oven, to sværene will be properly crisp.
    Come stock from the roasting pan into a saucepan, here is supposed to be about. 6-7 dl. Let casserole stand for a moment, and then remove some of the fat-
    Bring the stock to a boil, and reduce it, so you have approx. 4-5 dl. Turn off the heat and let the stock stand 5-10 min., so that the fat settles on top. Sprinkle with flour and let the fat suck it, and when all the flour is sucked up, then whip thoroughly with a whisk, and bring the sauce to a boil. In this way thickened sauce, and the flavor from the fat adds a little extra fullness (beware, however, that there is too much fat in the sauce).
    Cook the sauce for 6-7 min., And taste then with a little vinegar, sugar, salt and pepper. Put the sauce through a sieve, if there should be any clumps in.
    Let the roast rest at least for 15 min. Before you cut into it.
    Server roast pork with boiled potatoes, red cabbage and a good sauce.
