    Dried tomatoes with garlic and rosemary
    10 large ripe tomatoes
    3 cloves garlic
    5 sprigs rosemary
    2 tbsp. olive oil
    Salt and freshly ground pepper

    Wash the tomatoes, remove flower and cut the tomatoes into quarters.
    Remove the seeds by cutting them with a knife and discard (Keep to make a tomato sauce or soup at another time)
    .Put the tomatoes onto a baking sheet.
    Sprinkle tomatoes with salt, pepper, chopped rosemary and coarse piece of garlic and put them then onto a baking sheet and in the oven.
    Dry tomatoes at 60-70 degrees for 5-6 hours until they become firm and sweet.
    Take the tomatoes out of the oven and put them in a bowl or jar and store in the refrigerator.
    Use the tomatoes in salads, as a snack or together seafood.
    They are also very useful on a piece of toasted / grilled bread with ham or smoked fish.


    Dried tomatoes on grilled bread with fresh cheese and good ham
    4 people
    4 slices of good bread
    2 tbsp. good olive oil
    12-16 pieces of dried tomato
    8 very thin slices of parma or serano ham of good quality (
    4 tbsp. fresh cheese
    Salt and freshly ground pepper

    Sprinkle bread slices with oil and a little salt, grill them on a hot grill pan to get nice grill crust and smell lovely “burnt”
    Take the bread slices of grill pan and spread the cream cheese on, season with freshly ground pepper and place tomatoes and ham on top.
    Drizzle with a little oil from the tomatoes and serve as a little snack or starter.
