Cold cucumber soup with mussels and lovage
2 cucumbers (leave some cucumber to put in the soup when you serve)
1 liter of yoghurt 1.5%
2 ½ cups water
Salt and freshly ground pepper
½ bunch lovage
1 tbsp. Olive oil
1 tsp. apple vinegar
200 g steamed and cleaned mussels
Peel the cucumbers and cut them into big chunks. Sprinkle with 1 tsp. salt and allow to rest for 10-15 minutes. peel and chop the onion, put it in a blender or food processor along with cucumber, lovage, yogurt and water, and blend into a smooth soup, add salt and pepper. Allow the soup to rest ½ to 1 hour in the frigde, until it´s completely cold. Serve the soup with the steamed mussels, fresh diced cucumber, lovage leaves, marinated with olive oil, vinegar, salt and freshly ground pepper and good bread.
TIP: you can replace lovage with parsley, mint, chervil or verbena.
