Poached prunes with aquavit, orange, served with lightly whipped cream and chocolate
500 g Prunes
1 organic orange
2 tbsp fruit vinegar
1 vanilla pod
½ liter of water
150 g Sugar cane
1 dl aquavit
2 dl whipping cream
50 g of dark chocolate of good quality
Split the vanilla pod and scrape the vanilla seeds out, cut the orange into pieces and put it all in a pot together with cane sugar, water, vinegar and star anise.
Bring to a boil and let cook a few minutes.
Take the pot off the heat.
Put prunes into a bowl and pour the warm syrup and aquavit over.
Let prunes marinate for 12-24 hours, but the prunes just get better, the longer they marinate. Whip the cream.
Server the prunes in small bowls or glasses with whipped cream on top, grate the chocolate over and serve immediately.
You can also get the prunes in a jar, then they can stand up to 4-5 months in the refrigerator.
The dessert can also be made with apricots or dates instead of prunes.
