    Easy starter for New Year`s eve

    Crispy flakes of swede with smoked salmon and dill
    1 swede
    100 g cold-smoked salmon (good quality)
    ½ cup skyr or yohurt
    1 tsp liquid honey
    ½ organic lemon
    1 bunch dill
    Salt and freshly ground pepper

    Peel the swede and cut into very thin slices, use a mandolin.
    Put the slices in a bowl of cold water, so they get very crisp.
    Mix skyr or yohurt with finely grated zest and juice of lemon, honey, salt and pepper and chopped dill, keep a little dill for serving.
    Cut the salmon into small thin slices.
    Take the swede slices out of the water and let them drain thoroughly.
    Put the slices on a platter, put smoked salmon and dill cream on and a little dill on top.
    Server as a finger food with champagne or cocktails before dinner.
