Cabbage

    Soup with cabbage, grains and sausages
    ¼ cup olive oil
    1 large onion
    2 cloves garlic
    4 Sausages (chorizo or classic danish cabbage sausage)
    100 g cooked grains (wheat, barley or spelled grains)
    about 1½ liters of water
    1 kg mixed cabbage (cabbage, savoy cabbage, kale,  spring cabbage)
    10 sprigs of thyme
    sea salt and freshly ground pepper
    1-2 tbsp. apple cider

    Peel the onions and garlic and slice finely. Heat a pan with the oil and saute the onion and garlic a few minutes.
    Cut sausages in large cubes and add them  to the onions in the pan with thyme and saute further in a min.
    Put the cooked grains in the pot, add water and bring the soup to a boil. Boil the soup 15-20 min. until onions and grains are tender
    Cut the cabbage into very thin strips and rinse thoroughly, put cabbage in the soup and let the soup boil for 3-4 min., so the cabbage is tender, and season with salt, pepper and a little vinegar.
    Serve the soup immediately, with good bread.
    The soup can be made at any time of the year with different kinds of cabbage, depending of season; Savoy cabbage, cabbage, kale, cabbage and so on. You can also add potatoes or other root vegetables to the soup.
