Onion

    “Burned” and marinated onions with parmesan, lemon and sorrel
    4 people
    4 zittauer onions
    1 tbsp. apple vinegar
    3 tbsp. olive oil
    ½ liter of water
    50 g fresh parmesan
    1 organic lemon
    1 handfuld sorrel
    Salt and freshly guard pepper

    Peel the onions and cut in half.
    Heat a pan and add onions to the pan with the cutting surface down and let the onions “burn” in 4-5 min. Until they are well burnt and black.
    Add ½ liters of water, salt, vinegar to the pan and let the onions cook for 15 min. on low heat until they are tender but still keep their shape and bite.
    Remove pan from heat and allow the onions to marinated for 2-3 hours and cool slightly before being split into layers / shells.
    put onions on platter or plate and sprinkle with freshly grated parmesan, finely grated lemon zest, a bit of the brine from the onions, olive oil, salt, freshly ground pepper and red sorrel.
    Server as a small snack or appetizer with good bread.
