Baked marinated beetroots
5-6 large beetroots
½ cup. olive oil
½ cup. apple vinegar
2 tbsp. acacia honey
Salt and freshly ground pepper
Cut the top of the beetroots. Peel the beetroots and cut them into very thin slices on a mandolin.
Put beetroots slices into a ovenproof tray and marinate them with oil, vinegar, honey, salt and pepper.
Bake the beetroots in the oven at 170 degrees for about 8-10 min. So they just get tender and absorb the marinade, but still keeps its crispness.
Take the beets out of the oven, and let them marinate in the marinate while they cool down.
Serve the cooled beets with a little salad and herbs, serve with grilled meat or fish, or serve with slices of cold meats or cold cuts.
The beetroot can also be kept in a glass or in an airtight jar and stored for later use.
The beetroot can hold up to 15-20 bake refrigerated.
