    Serves 4

    8 small zucchini – preferably with blossoms on
    1 fresh salciccia (a type of Italian pork sausage)
    2 tsp olive oil
    1 bunch basil
    50 g parmesan
    300 g fresh pasta
    1 pesticide-free lemon

    Boil a pot of water with a little salt. Carefully rinse the zucchini and dry them thoroughly. Remove the flowers, and cut the zucchini into thick pieces. Cut the Salciccia in a small dice and place them in a sauté pan with half of the olive oil. Fry them on low heat for a couple of minutes. Add the squash to the pan, turn up the temperature, and fry them on high heat for 1-2 minutes, so that they brown, but remain a little crunchy. Wash basil, dry thoroughly, and cut coarsely. Grate the parmesan and place in a bowl. Place the pasta in the boiling water, and cook the fresh pasta 3-4 minutes, until it is al dente. Pour off the water from the pasta, and add the pasta to the fried zucchini. Add basil, zucchini blossoms in small pieces, parmesan, finely grated zest from the lemon, salt and fresh ground pepper along with a little splash of olive oil. Stir everything together. Garnish with a little extra parmesan on top and a little fresh ground pepper. Serve immediately.
