8 medium leeks
3 tbsp. olive oil
Cut off the root end and the outermost of the top of the leek.
Slice the green of the leek lengthwise and rinse leeks thoroughly in cold water, let them soak in cold water, so you are sure to get any sand and dirt out of them.
Remove the leeks from the water and let them drain thoroughly, put leek in a roasting pan with a drizzle of olive oil and salt.
Baked leek for 30-40 minutes at 180 degrees, so they are well burnt on the outside and soft in the middle, i that way keeps getting the great sweetness and, the leek flavor is quite intense.
Remove the leeks from the oven and split them lengthwise, so you get some long leek strips.
Arrange them in the bottom of a plate with the fried chicken wings and parmesan on top, sprinkle with a little red sorrel and serve immediately.
Server as a starter or as part of a larger meal.
Leek can easily be made a day or two in advance and then just heat them a bit or served cold on the day you need them.
Fried chicken wings
16 chicken wings
Finely grated zest and juice of ½ lemon
½ cup. olive oil
Sea salt and freshly ground pepper
40 g fresh Parmesan
Check chicken wings for feather, debris and stumps – remove them.
Marinated chicken wings in lemon zest and juice, olive oil and salt. Mix well, and let them
marinate for 1 hour in the refrigerator.
Put wings in a roasting pan and let them roast n the oven at 180 ° for 35-40 min., Until they are perfectly crisp and golden.
Take the roasting pan out of the oven and serve them with the baked leeks, grated parmesan and red sorrel.
