    Baked grapefruit with spices, lentils, red onions, feta and basil

    4 people
    4 red grapefruit
    2 cinnamon sticks
    5 bay leaves
    4 cardamom
    10 cumin
    3 star anise
    ½ dl olive oil
    100 g dried green peas
    1 red onions
    2 tablespoons æbleddike
    1 tsp. acacia honey
    1 bunch of basil
    50 g feta
    salt and freshly squeezed pepper

    Put the peas in a saucepan and rinse with cold water, add clean water so that it covers and bring to a boil.
    Cook the peas for 30-35 min. until they are tender but still have a little shape and bite. Pour if necessary excess water from peas, season the peas with salt, pepper and a little olive oil. Let the peas cool of a bit. Remove the skin from the grapefruit with a knife and cut I two half. Put the grapefruit in a ovenproof dish with the cutting surface upwards, sprinkle with all the spices and olive oil. Bring the dish to the oven and bake the grapefruit at 180 degrees for 10-12 minutes. so they are easily caramelized and gets a bit of color. Peel the red onions, halves and slices into thin strips, put the onion in a bowl with honey, a little salt and vinegar and let the onions marinate for 10 minutes. Server the baked grapefruit with the boiled green peas, red onions and feta on top and sprinkle with basil on top.

    Server as a breakfast or part of a brunch.
