Potato #2
New potato compote with smoked cheese, herbs and “burned” chives
1 kg new potatoes
Sea salt
1 cup yogurt 1.5%
1 dl smoked danish cheese
2 tbsp. cold-pressed rapeseed oil
2 tbsp. cider vinegar
freshly ground pepper
½ bunch of dill
½ bunch of chervil
1 bunch of chives
Wash the potatoes, put them in a saucepan and cover with water.
Add a little salt and bring to a boil 15-20 min until they are fully cooked.
Take the potatoes out of the water and mash them roughly with a fork or whisk. Add yoghurt, smoked cheese, a little cold-presssed rapeseed oil, vinegar and salt and pepper
Heat the compote in a pan, just a little bit and serve it with herbs and burned chives on top.
“burned” chives
Clean chives in cold water and drain it well.
Put chives on a baking sheet on a baking tray an put in the oven.
Bake/burn chives at 250 degrees until they become completely black and burnt. (Approx. 25-30 min)
Take the chives out of the oven and crushed it easy for a black powder.
Save the burned chives powder in a small glass, so the rest can ben used at another time.
Can be used to sprinkle on a potato, or in a dressing, gives the food a taste of smoke an grill.
