Prunes
Vinegar made on prune stone
20-25 prune stones (alternatively, plum or apricot stone)
1 liter of white wine or apple vinegar
Put the prune stones in a big jar and pour vinegar on.
Let the vinegar rest 3-4 weeks before using it, but just gets better and better with time.
The prune stones give vinegar a taste and scent of bitter almond and marzipan.
The vinegar is good for marinade, dressings and sauces who need a bit of freshness and bitterness, good for christmas food.
