    Fried cucumber with squid, cottage cheese, roasted buckwheat, iron

    2 cucumbers
    2 small 10-inch squid
    100 g cottage cheese
    40 g roasted buckwheat
    Lemon verbena
    Salt and pepper
    1 organic lemon
    ½ dl olive oil
    Wash cucumbers and halves, then cut lengthwise to get 8 large pieces of cucumber.
    Heat a pan and put cucumbers on it, with the cutting surface downwards and fry them for 3-4 minutes. At high heat, so they get a Lightly ”burned” surface.
    Remove the cucumbers and put on a dish and season with salt and freshly ground pepper.
    Clean the squid or get your fishmonger , rinse well in cold water, thoroughly drain and then shred into thin rings / strips.
    Put oil on a hot pan and fried squid at high heat for approx. ½-1 min. Then put them in a bowl and season with salt, freshly ground pepper, finely grated lemon zest, juice and the rest of the olive oil and mix it well.
    Put cucumbers on the plate or dish, put cottage cheese on the plate, squid and some of the marinade, sprinkle with toasted buckwheat and plenty of verbena.
    Server immediately with good bread, as a lunch dish or starter.
