Baked beetroot with cherry, licorice root, moscovadosukker and coffee
    4-6 people
    1 kg beetroots
    200 g frozen cherries
    3 pieces licorice root
    2 tbsp. moscovadosugar, another dark and rich sugar can also be used
    15-20 coffee beans (good quality )
    ½ cup. cherry vinegar, or other dark fruit vinegar
    ½ cup . olive oil
    Salt and freshly ground pepper
    ½ bunch chervil

    Peel the beets and cut them into chunks, put beets into an ovenproof dish. Put the cherries, moscovado sugar, licorice, coffee beans, oil, vinegar, salt and pepper into the beets and toss it well. Put the dish in the oven and cook the beets at 180 degrees for 20-25 minutes. Until tender, lightly caramelized and still with a good bite. Take the beets out of the oven, mix the beets and remove the coffee beans. Server beets with chopped cervil on top, as an garnish for fried or braised beef, veal or lamb.
