Fried chicken with pomegranate, mint, lemon and cumin
    4-6 people
    1 fresh chicken (free-range or organic)
    1 pomegranate
    ½ bunch mint
    1 organic lemon
    1 tbsp. cumin
    2-3 tbsp. olive oil
    Salt and freshly ground pepper
    Check chicken for freshness, remove any feather stubs.
    Place the chicken into an ovenproof tray.
    Cut the pomegranate into halves and take out the pomegranate seeds.
    Getting seeds into a bowl, along with mint, juice and finely grated zest of lemon, cumin, olive oil, salt and pepper and mix well to a marinade.
    Pour the marinade over the chicken and rub the marinade thoroughly into the chicken .
    Place chicken in a preheated oven at 180 degrees and fry the chicken for 60-70 minutes, until it has a nice golden surface and crisp skin.
    Remove the chicken from the oven and let it rest for 10 minutes, before cutting into smaller pieces.
    Server the chicken with a nice salad, some boiled potatoes, baked root vegetables or a nice risotto
    The juice from the chicken and pomegranate in the ovenproof tray, is really nice to dip a piece of bread in or for the potatoes.
