Eggs
Fried egg with fried cauliflower, basil, hazelnut and parmesan

4 eggs
400 g cauliflower
1 bunch of basil
50 g grate fresh parmesan
30 g hazelnut
4 tablespoons.
Olive oil
Salt and freshly ground pepper
Cut cauliflower into small bouquets and rinse in cold water, drain thoroughly
Heat a pan, add some oil and fry cauliflower at high heat a couple of minutes, so cauliflower gets some color and so it gets tender but still with good bite.
Season with salt and freshly ground pepper and take cauliflower of the pan.
Put some new oil on the pan and put the 4 eggs on the pan and fry them on medium heat for 2-3 minutes. until the eggs set and still is soft and liquid.
Put the fried cauliflower on 4 plates, a fried egg on each plate, grate the parmesan over, sprinkle with chopped hazelnut and basil on top.
Server with bread for like breakfast or lunch.
