3 organic lemons
600 g sugar
2 iters of water
Cut flowers from the stems and put them into a bowl. Cut the lemons into slices, put up in a saucepan with sugar and water. Heat water, lemons and sugar up, just to the boil and then pour it over the elderflowers. Let the lemonade rest in 6-12 hours on the kitchen table before being sieved and bottled.
Store the lemonade in refrigerator then it can be kept in 30-40 days. The lemonade is served with a little water and ice cubes in.

Fried chicken with elderflower and mustard
1 free range chicken
2 tbsp. mustard
½ dl. Elderflower lemonade
½ dl. cider vinegar
1 elderflower bouguet/screen
1 dl. Cold-pressed rapeseed oil
Sea salt and freshly ground pepper.
Stir mustard, vinegar, elderflower juice and flowers, oil, salt and pepper together into a marinade.
Put the chicken into an ovenproof dish, check the chicken for feather stubs and dry it with a little paper towel inside.
Rub the chicken with marinade and let it marinade in 1 hour.
Put chicken in oven and cook it at 180 degrees for 50 min., Turn off the oven and let the chicken rest in the oven for 10 min.
Take the chicken out and let itrest for 10 min. more
Spilt the chicken in 10 pieces, breast, thighs and wings, an then server with a large bowl of salad and good bread.
