Grilled pickled lemons

    10 organic lemons
    2 liters olive oil
    1 Tbsp. coriander seeds
    1 Tbsp. fennel seeds
    10 whole black peppercorns
    10 bay leaves
    1 Tbsp. salt
    1 large jar

    Cut the lemons through and put them on a very hot grill pan or grill.
    Grill the lemons 2-3 minutes on both sides, so they get a nice burnt and caramelized surface.
    Put the lemons directly into the jar, add all the spices and olive oil, it`s important that the lemons are completely covered with olive oil.
    Close the jar and let lemons rest and marinate for 3-4 weeks before being used.
    Use the lemons in dressings, baked root vegetables, stews or for roast chicken, fish or veal.
    The oil from lemon are also great for marinating vegetables and salads.
