    Grilled whole snapper with lime, chili and fresh coriander.
    4 people
    1 whole snapper (about 2kg)
    3 limes
    2 whole red chillies
    1 bunch fresh coriander
    sea ​​salt and freshly ground pepper
    1 tablespoon sugar
    2 tablespoons olive oil

    Cut the fish up and take the guts out, wash thoroughly in cold water.
    Sprinkle the fish with sea salt and freshly ground pepper.
    Place the fish on a very hot grill and grill for 6-7 minutes on each side until skinden is crisp and golden.
    Press the juice of lime into a bowl, stir together with chopped chilli , sugar, olive oil and chopped korainder.
    Remove fish from grill and place onto a serving dish, pour marinade over fish while still quite warm, so the fish will absorb the marinade.
    Server fish with it together and eat boiled rice.
